AD Singh has made an announcement that Viraf Patel has joined as Executive Chef at Olive Bar and Kitchen, Bandra, the Olive Group’s flagship property.

An industry veteran in his own right, Chef Viraf Patel brings with him over 20 years of experience, having worked at and consulted with some of the country’s finest dining establishments which in Mumbai include the erstwhile Indigo, The Tasting Room at Good Earth, The Table, and Impresario Group’s Salt Water Grill and Salt Water Café. Most recently, he was also Partner, Chef and Managing Director at Black Sheep Hospitality’s Café Zoe.

We welcome Viraf into the Olive family and are confident that he will marry his distinct culinary style to Olive’s F&B philosophy seamlessly. Olive is now in its 19th year, and we look forward to the fresh perspective that Viraf will bring as we join together to ensure that our flagship remains as fresh and relevant today, as it did almost two decades ago when we opened.

Chef Viraf is no stranger to the Olive Group, having begun a consulting project with Toast & Tonic in February 2018. He then took a break, following which he re-joined the Group, this time to consult with Olive Bistro and The Hoppery in Hyderabad, as Brand Head. He continues that role, while additionally taking on the responsibilities as Executive Chef at Olive Bar & Kitchen, Bandra.

Viraf is currently tinkering in the kitchen and working on the new menu for Olive, Bandra. Diners can expect Chef Viraf’s unique signature touches to classic dishes, which will still retain the inimitable Olive vibe. Global influences will complement the freshest local ingredients, and a focus on lighter, brighter dishes will be apparent.

Having spent over in 20 years in the F&B industry, I’ve always looked up to AD and the Olive Brand. I’m delighted that the Executive Chef role at Olive is my next step. This is the flagship property of the group; the prestige of the restaurant and the role it has played in transforming India’s culinary landscape is inspiration enough. Chef Viraf’s new menu at Olive Bar & Kitchen, Bandra will launch in September 2019.
