Mumbai is a city known for its love of pavs. People in and visiting the city often enjoy Pav Bhaji, Misal Pav, Vadapav;  and yet we have very few variants made from the core ingredient. With an aim to serve more, a food enthusiast from the city has started 'Out Of Pao' a cloud kitchen that offers delicious dishes stuffed with international and exotic fillings into the locally beloved pav!

For the quick snack lovers and mainly pav cravers, this menu is a deal that brings you a rainbow of options with a hope leave you fascinated with the delightful and trendy variations.

The kitchen offers variety from Mexican beans to paneer to chicken to mushroom, and also covers a diversity of taste buds. One can expect to find Amigo, Pesto Pao, Lucy in the Sky, and Mi-so Sexy to name a few of the additions; and besides being quirkily named, these dishes are no less than a refreshing burst of flavours!

These delicious stuffed pavs are perfect for a small hunger fix. When it comes to snacks, there isn’t any set differentiation. Thus, the menu is of an ‘all-day’ nature, to be eaten whenever you want, especially, when you wish to eat something new, light, and yet stomach-filling. 

Dave Malhotra, partner at Septagon Hospitality shared the journey in an exclusive interview with Mumbai Live.


Sharing his thought behind setting up a business based on ‘Pao,’ he said, "I always knew I wanted to do something in the food industry and there is no better way to start other than the most basic and one of my favourite foods that I eat almost every day - pao or bread. Being a product of a mixed marriage (Catholic and Punjabi) and thanks to my lack of cooking skills, I eat anything and everything with Pao! Pao is literally my comfort food, hence OUT OF PAO."

Talking about the decisions made regarding the menu, he added, "The basic pao can be eaten with almost everything. The thought was to pair it up with unique flavours and ingredients that have never been tried before."

"When we began the process of establishing Out of Pao, it was in the heart of the pandemic. The thought was to start with a cloud kitchen and deliver it to the consumer, as a front wasn’t an option then. As and when the situation permits we intend to introduce a pao truck as well," on being asked about the reason behind a cloud kitchen and not a joint.

Concluding the chat, he shared his thought on reviving the business post-COVID times and the future growth, and said, "We actually started our kitchen during the peak Covid times and so far the response has really been encouraging. We are seeing a very healthy growth week after week and we definitely intend to keep extending our reach. The feedback received on our brand has been very motivating and great. We definitely have plans to take the flavour of Pao to other cities and different states of India as well. No one should miss out on the delicious offerings of Pao!"
