"It took nearly 1 month to finish it single-handedly": Pune-Baker Who Created Biggest Royal Icing Structure

Pune-based Prachi Dhabal Deb has mastered the art of creating royal-looking, luxurious bakes, which are majestic in their appeal.

Prachi is an international-award winning cake artist from Maharashtra. She, recently, won two titles in the World Book of Records, London, for her icing structures.

While talking about her journey to Mumbai Live, Prachi shared: “I have been a cake artist since 2012 and my journey as a royal icing cake baker started in 2015 when I got the opportunity to learn from Sir Eddie Spence MBE in the United Kingdom. I have always been fascinated with the beauty and elegance of the Victorian and European architecture. Milan Cathedral being one of such iconic monument has the grandeur and the regal elements that are a perfect blend of beauty and aesthetics.”

Deb clinched her first record for creating the biggest icing structure in the world. The vegan edible royal icing structure weighed 100 kg and was inspired by Indian and European architectures, stated the World Book of Records.

Explaining about the preparation process and journey, Prachi expressed: "The planning and preparation took a lot of time. Then piping all the pieces, which were around 1500 approximately, single-handedly and assembling took around a month. Every aspect of this structure has been a challenge but have enjoyed every bit of it. The measurements of the same is as follows - 6 feet 4 inches in length, Height is of 4 feet 6 inches and Width of 3.5 feet. The entire structure has been made with vegan royal icing. The structure weighs more than 100 kgs."

She can be rightly called the queen of royal icing and her designs would justify the same. Taking inspiration from artistic elements from around the world, Prachi incorporates these in her designs. Her deft execution of the thin but evenly spaced strings of royal icing extension work is an epitome of perfection par excellence.

Sharing further, Prachi mentioned: "Royal Icing is one of the most traditional medium of cake decorating and is also the most versatile. However, is a difficult to work with and is very fragile. Though highly prestigious, having being used for decorating the cakes for the British royal family, this delicate art requires high amount of patience and skills and finds very limited commercial success worldwide.

Being traditionally egg-based, the popularity was not much in Indian cake industry as well. Understanding the customer base in India, she knew that to have maximum admirers of her art, she will have to make eggless cakes and royal icing, thus she came up with her own product, Vegan Royal Icing, in association with Sugarin—the same is available across popular online platforms nationally and internationally and has been a huge success.

“As the traditional recipe of royal icing has eggs, for making it suitable for the Indian market and the vegan community I developed an egg-free, vegan version of royal icing in association with an Indian company Sugarin and the same is available in India and internationally,” she further added.
