This November, Chef Ting Yen comes back to Yuuka, the luxurious modern Japanese fine dining restaurant at The St. Regis Mumbai, with New Menu Additions featuring signature dishes, that will be handcrafted and served from November 8, 2018 onwards. 

Many new innovations in flavours, tastes and textures introduced by Chef Ting, make their way to Mumbai for this Special Menu that presents a refreshingly modern take on Japanese cuisine.

King Crab Nikkei Style

With his son Kevin, Chef Ting Yen is excited to bring the novel concepts all the way from Boston to Mumbai. An amalgamation of the colours and ingredients form the mainstay of this menu, with subtle flavours of delicately rolled Sushi and Maki, hearty Gyoza, Crispy Causa, Misuma Salad, Foie Gras, Slow Cooked Salmon with Wakame as well as many other innovations that blend Japanese ingredients with other cuisines. Signature creations include Green Mountain, Steam stuffed Tofu skin, Vegetarian treasure box, Nikki style King Crab, Charred kale in Wasabi, Botan Ebi ceviche and more.

Chef Tings New Menu also includes a Pop Up Menu featuring dishes like Oyster Beurre Blanc Oysters, Caviar and Shoya Beurre blanc, Matsutake Sui Gyoza matsutake mushroom, ika and pine float, Hamachi Usuzukuri Gold leaf - Yuzu citrus dashi, white soy, Caviar, Brassed Mango Chicken Spicy ponzu glazed, pickled Sakura flower, Maitake Mushroom Beurre Blanc Maitake Mushroom, tonburi, Shoya Beurre Blanc, Tofu Paneer Tartar Tofu, Paneer, shallots, chives, Tonburi, toast bread and Mango Grilled Acorn Squash Spicy ponzu glaze, pickled Sakura flower along with many local spices find their way into the Menu at Yuuka.

Mizuna Salad

Chef Ting Yen is renowned for redefining Japanese cuisine in a modern fashion by combining the traditional Japanese elements with international cuisine/ingredients.

His food is known to capture the nuances, freshness and complexity of flavors in an elegant setting. His culinary style can be encapsulated as “freshest ingredients prepared in the most succinct way, and presented as a work of art” with a focus on creating a dining experience that appeals to all senses.
